Automatic Corker

Yes, you are reading correctly! We finally have an automatic corker! Now it is easier than ever to bottle your wine! For those of you who enjoyed using the manual corker (or enjoyed watching Calvin help you)… it is still here for you to use..otherwise I guess you’ll have to get your exersize elsewhere! (and so will Calvin)
We’ve also purchased two more carbonation kegs for our beer system, which doubles the capacity of beer we can produce in a week – another long overdue upgrade!

Good to the very Last Drop! Article: Using leftover wine

Since it’s unlikely you’ll finish every bottle of wine you ever open, we have some recommendations for how you can put all that leftover wine to use; besides the best option, which is, of course, drinking it.

Using leftover Red Wine:

If the bottle has been open for less than 2 days. The wine is still perfect for poaching fruit. Especially fresh pears, if they’re in season.

Recently opened wine can also be used to marinate strawberries. Yummy on pancakes, flan, or vanilla ice cream!

Turn leftover wine into mulled red wine syrup you can drizzle over chocolate desserts, citrus fruits, and duck, or fold into Greek-style yogurt.

Add red wine to liven up your spaghetti sauce or beef stew!

Using leftover White Wine:

White wine is a great addition to recipies that call for seafood such a mussels, grilled fish, shrimp scampi or bouillabaisse.

Recipies for cream sauces, bechamel, or beurre blanc can also be improved with a splash of leftover white wine.

To make sure you never have to pour out leftover wine, purchase plastic bottle stoppers, a spray preserver, or a vacuum pump to reduce oxidization and keep your wine drinkable longer.

Home Brewer Section

Soda Quick Machines
Until recently, it has been quite a challenge for home brewers to make carbonated cider and cooler kits at home.  The only practical way to have off-dry, crystal clear, sparkling ciders and wine coolers was to make them on our premise, where we can filter then force carbonate.
But that has now changed, thanks to SodaQuick Machines!  For just $79, a SodaQuick machine lets you instantly carbonate a single bottle.
You can make unlimited fizzy water, healthier, cheaper homemade sodas, and you can carbonate your Vinoka cider and cooler kits!  The CO2 cylinder is refillable at several local establishments for just a few dollars (we’re working on a cylinder exchange program) and this durable little machine requires no electricity or batteries.  It’s amazing!

30 Malts + Liquid Malts
If you’ve been in our store in the last six months, it’s hard to miss the growing number of grain bins that we’ve been amassing in our hombrewer’s section.  We now carry 30 different malted barley and brewers grain varieties, which actually gives us one of the largest retail-level selections in the province!  We’re quickly becoming the place in the lower mainland for serious home brewers to get their beer ingredients.  To top that off, we’ve also finally brought in Light and Amber liquid malt extracts, which are great for beginning brewers that are a little intimidated by the mashing and sparging process.

New Liquid Yeasts
We now have about two dozen liquid yeast strains in-store, and have a revolving stock of at least as many more specialty strains as seasonal releases and custom requests come in.  These liquid yeasts allow the home brewer to make beers in many styles that are not possible with generic dry yeast packs.  While the $9.75 price tag for a liquid yeast strain might be a bit of a shock, the good news is that a yeast pack can be used for up to six generations – that means you can reserve a portion of the kreusen (the foamy head that forms during fermentation) in a flask, mason jar, test tube or petrie dish for up to two weeks in your fridge, then re-pitch it on your next batch (you may need to create a yeast starter solution, but that’s another topic).  alternatively, if you make the same beer style over and over, you can pour your next wort straight on to the lees from your previous batch.  Yeast may start to mutate after about six generations of inter-breeding, which is why it is recommended not to re-use yeast more than that many times.
If, like me, you’re serious about creating a “yeast bank” and getting maximum use out of every smack pack you open, you’ll be happy to know that we carry Erlermeyer Flasks, test tubes, petrie dishes, and all the equipment, sanitizing agents, and ingredients required to create yeast slants, starters and cultures.  I’m also more than happy to share my experiences, best practices, and procedures – so just ask!
